摘要
采用中红外(MIR)光谱技术(包括:一维MIR光谱、二阶导数MIR光谱、四阶导数MIR光谱和退卷积MIR光谱)分别开展了香油结构的研究。实验发现,香油结构的主要红外吸收模式包括:CH3官能团不对称伸缩振动模式(ν■)、CH2官能团不对称伸缩振动模式(ν■)、CH3官能团对称伸缩振动模式(ν■)、CH2官能团对称伸缩振动模式(ν■)、C=O官能团伸缩振动模式(ν■)、蛋白质结构酰胺Ⅰ带模式(ν■)、C=C官能团伸缩振动模式(ν■)、蛋白质结构酰胺Ⅱ带模式(ν■)、CH2官能团变角振动模式(δ■)、CH3官能团不对称变角振动模式(δ■)、CH3官能团对称变角振动模式(δ■)、C-O官能团伸缩振动模式(ν■)和CH2官能团面内摇摆振动模式(ρ■)。研究发现,香油的主要成分是油脂、蛋白质及多糖。为香油结构研究建立一个方法学,具有重要的应用研究价值。

Abstract
The structure of sesame oil was studied using mid infrared (MIR) spectroscopy techniques (including one-dimensional MIR spectroscopy, second-order derivative MIR spectroscopy, fourth-order derivative MIR spectroscopy, and deconvolution MIR spectroscopy). The experiment found that the main infrared absorption modes of sesame oil structure include CH3 functional group asymmetric stretching vibration mode (ν■), CH2 functional group asymmetric stretching vibration mode (ν■), CH3 functional group symmetric stretching vibration mode (ν■), CH2 functional group symmetric stretching vibration mode (ν■), C=O functional group stretching vibration mode (ν■), protein structure amide I band mode (ν■), C=C functional group stretching vibration mode (ν■), protein structure amide II band mode (ν■), CH2 functional group bending vibration mode (δ■), CH3 functional group asymmetric bending vibration mode (δ■), CH3 functional group symmetric bending vibration mode (δ■), C-O functional group stretching vibration mode (ν■) and CH2 functional group rocking vibration mode (ρ■).Research has found that the main components of sesame oil are fats, proteins, and polysaccharides. This study establishes a methodology for the identification of the structure of sesame oil, which has important application research value.
